Dr. Layman is Professor Emeritus of Nutrition in the Department of Food Science and Human Nutrition at the University of Illinois. "My laboratory is working to define protein and amino acid requirements and the interrelationship between dietary protein and carbohydrates in adult health.


Our research is focused on the impact of diet and exercise on adult health problems of obesity, type 2 diabetes and the Metabolic Syndrome."


With more than 33 years of teaching and research experience, Dr. Layman has received numerous honors and recognition, including awards from the American Society for Nutritional Sciences, the National Institutes of Health and the Nutrition and Metabolism Society.

Enzymes for a Healthy Microbiome

In 1982, she re-careered herself as a licensed Medical Massage Therapist, which allowed her to function in both fields. She also opened her own integrative practice, working closely with physicians to focus on whole body health and wellness.
